Carrot Cake w/ Cream Cheese Frosting

1 pound carrots, cleaned, scraped and grated
1 cup walnuts, chopped
1 8 oz. can crushed pineapple, drained
1/2 cup shredded coconut
1-1/4 cup vegetable oil
4 eggs
2 cups sugar
2 cups flour
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. allspice
1/8 tsp. ginger

Combine all ingredients.

Grease and flour a 13x9 inch baking pan.

Spoon batter into baking pan.

Bake 55 to 65 minutes at 350 or until a toothpick inserted in the center comes out clean.

Allow cake to cool before removing from pan.

Cream Cheese Frosting

1 8 oz. package cream cheese, cut into chunks.
1 pound confectioner's sugar
1 tsp. vanilla
1 tbs. lemon or orange juice

Combine all ingredients and spread over cooled cake.
